7. The Dalmore 18: Dalmore’s trademark style is luscious notes of orange, chocolate and spices, and the 18-Year-Old bottling is a terrific example. Aged in both bourbon and sherry casks, it has seductive notes of vanilla, dark chocolate and candied orange on the nose, followed by a full-bodied, spicy palate of cinnamon and stewed fruit. 8. Opus One Wine: The essence of time is expressed in Opus One by the character of each vintage. Place, often defined as terroir, represents the geography, the climate and the essential human element which is captured in the wine’s balance between power and finesse, structure and texture.

9. French Wines: Not sure which wine to choose, how about three delicious French wines… you can’t go wrong with any of these wines.

  • Terres Brulées Cornas Syrah: A deep ruby-black with purple hints. Blackcurrant, dark cherries and blackberries, with spices, licorice and cocoa on the nose. A very rich mouth-feel with flavors of black fruit, jam, vanilla, spice and mineral notes. This wine has firm tannins and a long lasting finish.
  • Bila-Haut Occultum Lapidem: he Occultum Lapidem displays great dark garnet-red color in the glass. The nose is laden with aromas of black fruits, pepper, leather and graphite with hints of shrubs. On the palate, the fleshy quality of the wine is apparent straightaway from the attack. Rich and dense, the wine finishes with a balance of fruit and delicate tannins.
  • Prémices: A pure, elegant style, with an alluring raspberry puree note leading the way, while light blood orange, red currant and plum fruit flavors follow close behind. Nuances of incense, mulling spices and rooibos tea flitter throughout. The finish is silky and persistent.

Valentine’s Day Gifts You’ll Love

We know that Valentine’s Day can be a tad bit stressful. Alluring aromas of macerated cherries, scorched earth, coffee, barrel spice and dark chocolate are followed by supple, focused, concentrated dark-fruit flavors. It brings some tannic heft that will benefit from time in the cellar.
  2. Caymus Special Selection | Cabernet Sauvignon 2012 | Napa Valley: Exhibits a delicious, up-front core of juicy dark berry, blackberry, black licorice and creamy, toasty, vanilla-scented oak. Appropriately tannic and structured, this is made in a style you can drink now or cellar for up to a decade. Drink now through 2026.

  3. Revolver Wine Company | The Stash Cabernet Sauvignon 2013 | Napa Valley: Very limited production – only 50 cases produced of this sought-after wine. Cedarwood, spice box and black currants seduce the nose followed by a pallet of powerful layers of rich fruit and dashes of vanilla. 18 months of 100% French oak aging. ‘The Stash’ will truly enjoy a bit of decanting when served at a young age.

  4. Silver Oak | Cabernet Sauvignon 2012 | Napa Valley: Notes of dill, herb and vanilla bean-scented oak lead to an elegant array of dark berry, herb, cedar, gravelly earth and underbrush flavors. The tannins cling a bit, but this is an enjoyable and approachable youngster, with a track record for aging. Drink now through 2028.
  5. Stag’s Leap Wine Cellars Artemis | Cabernet Sauvignon 2014 | Napa Valley: Opens with inviting aromas of dark cherry and berry fruit, cassis, sweet vanilla and a hint of olive. On the palate, the wine has a smooth entry with a rich mouthfeel and lingering aftertaste of black cherry and dusty cocoa. Blend: 94% Cabernet Sauvignon, 5% Merlot, 1% Petit Verdot

  6. Antica Cabernet Sauvignon | Cabernet Sauvignon 2013| Napa Valley: A beautifully elegant, stylish Cabernet Sauvignon from the Antinori outpost in Napa Valley, their 2013 has a dense ruby/purple color, a beautiful, sweet kiss of pure blackcurrant fruit, licorice and forest floor. Full-bodied, but with creamy texture, sweet, beautifully integrated acidity, tannin and alcohol, this is an impressively well-crafted wine that’s drinkable now, but should evolve nicely for another 15-20 years.

  7. Opus One | Red Blend 2014 | Napa Valley:  The 2014 Opus One exudes subtle aromas of fragrant florals, fresh garden herbs and forest floor that give way to a concentrated blend of red cherry, blackberry and black currant. Fine-grained tannins offer a velvety texture and complex structure that builds to a long, vibrantly fresh finish with a touch of mocha. Enjoyable now, the wine will delight for years to come.Blend: 80% Cabernet Sauvignon, 7% Petit Verdot, 6% Cabernet Franc, 5% Merlot, 2% Malbec
  8. The Mionetto Prosecco Brut DOC | Varied Sizes: Tasty prosecco with an intense fruity bouquet and a hint of golden apples. It is very dry, fresh, light in body and well-balanced.This wine is perfect alone as an aperitif or as a delightful complement to appetizers such as prosciutto or mild cheeses. Excellent as a base for Bellinis and other sparkling wine cocktails.

Our 3rd Annual Single Malt Scotch Tasting took place last Thursday, December 7th, and what a success it was!  Guests sampled 6 delicious scotches and enjoyed hors d’oeuvres made to pair perfectly with sipping scotch. The Arlington Advocate stopped by to talk with our guests and we look forward to seeing the story in the paper this week. Thank you to everyone who stopped by!

  • Putnam New England Rye Whiskey from Boston Harbor Distillery – Offers a sharper, earthy finish that you can only get from Rye and it wraps the whole experience up for an unforgettable silky, smooth whiskey.
  • Nor’Easter Bourbon Whiskey by Triple Eight Distillery – The climate and geography have a noticeable impact on the taste of the bourbon. The distillery’s proximity to the ocean and marine haze (Nantucket is nicknamed “The Grey Lady” ) add a touch of salinity to the bourbon.
  • Rowan’s Creek Bourbon Whiskey by Willett Distillery – On the palate you are treated to sweet caramel, vanilla, dusted in floral notes… Finishing notes of oak and a lingering spiciness.

Champagne Vs. Processo

champagne collageProsecco and champagne are the two sparkling wines most commonly associated with celebrations! They are both similar and different in several important areas. To help you understand the difference between the two we’re breaking down each one below  –

    • Prosecco
      • Come from the Italian regions of Veneto and Friuli Venezia Giulia, is made from the Glera(Prosecco) grape with up to 15% other white grapes allowed.
      • It is available in three different styles, spumante(sparkling), frizzante(semi-sparkling) and tranquillo(still wine).
      • It is produced using the Charmat or bulk method where the wine undergoes a secondary fermentation in large steel tanks.
      • Prosecco typically has a lighter mouthfeel and more subtle flavors than champagne.
    • Champagne
      • Comes from the Champagne region of France although many fine sparkling wines from other countries borrow the name.
      • Champagne uses three main grapes which can be blended in combination or produced singly. The grapes are Pinot Meunier, Pinot Noir and Chardonnay.
      • The types include Blanc de Blanc, Blanc de Noir and Rose and several other less common types. Several different styles ranging from bone dry “brut” to slightly sweet “Demi Sec” are produced.
      • The secondary fermentation occurs in the individual bottles requiring more time and attention than Prosecco’s bulk method.
      • Flavors are usually more pronounced than those of Prosecco.
